This Week’s Meal Plan

Sunday: Sunday Leftovers
Monday: Cabbage Stuffed Pitas. Blame it on my Arabic heritage, but I love pita bread and I love filling it up with green stuff.
Tuesday: Quick Prep Veggie Soup that I told you about here.
Wednesday: My favorite Green Beans & Red Potatoes. I really went nuts with the nutritional yeast and it was a good call. It’s almost cheesey. Really. Try it. You can do it.
Thursday: Roasted Vegetable Quinoa. We roasted broccoli, kale, butternut squash, garlic, and onions. I doubled up the quinoa to make sure we had leftovers! It was seasoned with red pepper flakes and I threw in a tub of ricotta after I served the kids. Mmmm.
Friday: We skipped the broccoli and instead asked Lucy where she wanted to go for some special Mommy & Daddy time to celebrate her birthday. You can imagine her father’s disappointment when she said, “the mall”. It was a lot of fun! She got a Burger King kid’s meal [which is a big deal when you only eat fast food a couple times a year!] and Mommy celebrated a weaned babe with a bowl of fried rice!
Saturday: We’re having party leftovers because this stayed-up-way-too-late,too-many-nights mama is exhausted!!
